So I’m a dessert lover. There, I admitted it. If the world ran out of candy tomorrow I wouldn’t bat an eye, but I’ll arm wrestle you for that last piece of cake! I usually try to make healthier versions of my favorite recipes, and usually have great luck! One of my favorite places to get recipes is from Skinny Taste. But there are SOME recipes that you don’t fool around with. And this blueberry cheesecake is one of ’em! I made this recently and had a ton of requests for the recipe so I decided to share! This is from my favorite cook book, The Coastal Living Cook Book. You bet this book will make it to our Hilton Head Island Vacation, again!
Ingredients:
1 1/2 c. finely ground almonds
1/4 c. sugar
3 T. butter or margarine, softened
1 T. all-purpose flour
3 (8 oz) packages of cream cheese, softened
1 1/4 c. sugar
3 T. all-purpose flour
1/2 t. salt
4 large eggs
1 (8 oz) container of sour cream
1 t. vanilla extract
1 T. grated lemon rind
1 1/2 c. fresh or frozen blueberries
1 c. whipping cream
2 t. sugar
2 T. sour cream
Garnish: Lemon Rind Strips & Blueberries
Stir together first 4 ingredients in a small bowl. Press mixture into bottom and 1 1/2 inches up the sides of a slightly greased 9-inch springform pan; set aside.
Beat cream cheese at medium speed with an electric mister until smooth. Combine 1 1/4 cups sugar, 3 tablespoons flour, and salt. Add to cream cheese, beating until blended.
Add eggs, 1 at a time, beating well after each addition. Add 8-ounce container sour cream, vanilla, and lemon rind, beating just until blended. Gently stir in 1 1/2 cups blueberries. Pour batter into prepared pan.
Bake 300 degrees for 1 hour and 10 minutes or until center is firm; turn oven off. Partially open oven door; let cheesecake stand in oven 30 minutes.
Remove cheesecake from oven; cool in pan on a wire rack 30 minutes. Cover and chill 8 hours. Release sides of pan.
Beat whipping cream at high speed until foamy; gradually add 2 teaspoons sugar, beating until stiff peaks form. Fold in 2 tablespoons sour cream. Spread over cheesecake. Garnish, if desired.
